Thoughts from an Epicure: Relaxing after the rush

Now that most of the hassle and stress of the holidays is behind us, it’s time to relax and reflect on the season.

Once the rush is over, most of us are much calmer. It is a great time to have a small get together with close family or friends. My nephew, John, and his wife, Carla, recently proved that by hosting an after-Christmas brunch. Along with us, his mother, three sisters, their spouses, and some of their children were there. It was relaxing and great fun. Since that was the first we’d seen my family during the holidays, we exchanged gifts, which added to the festiveness, as we shared a wonderful meal.

Because both John and Carla are talented cooks, we knew the meal would be good. And it was. Along with breakfast sausage and well-cooked scrapple, we enjoyed a baked French toast casserole, and mimosas. In addition, one of John’s sisters brought a spinach and mushroom quiche. Although everything was delicious, one “star” was an appetizer called “cheese rounds,” which Carla made.

She was kind enough to share the recipe:

Carla’s Cheese Rounds

1 stick of butter, ¼ of a pound, softened

2 cups of grated sharp cheese

1 cup of flour

1 teaspoon of salt

Tabasco sauce to taste

Blend all of the ingredients together. Divide it into two balls. Work each ball into a long roll about 1-inch thick. Wrap each one in waxed paper and chill. Unwrap and slice very thin, less than ¼ inch thick.

Pre-heat your oven to 350 degrees. Place rounds on an ungreased baking sheet. Bake 10 to 15 minutes, until golden brown in color. The recipe makes about 100 rounds.

These are very tasty – everyone liked them.
