In keeping with its tradition of using rare, historic and reclaimed woods during the making of its small batch spirits, local distillery Hewn Spirits recently premiered its latest one-of-a-kind, limited-release whiskey at its tasting room in Peddler’s Village.
Solebury 100% Rye is a collaboration between Hewn Spirits and the Solebury Township Historical Society. Hewn’s founder and Master Distiller Sean Tracy was thrilled at the opportunity to get access to a precious piece of the long-gone Columbus Oak Tree, which experts date back to the 1400s.
“Using unique and historic wood is at the core of Hewn Spirits ethos. The idea of creating a limited-release, small-batch, local spirit using such a storied and ancient piece of Solebury’s history, while giving back to the community, seemed like an opportunity too good to pass up,” commented Tracy.
The 100% Rye, which is made from local grains, bottled at 100 Proof and aged in Hewn’s used Bourbon Barrels is available at Hewn’s Peddler Village Tasting Room on Street Road in Lahaska, or online through its website.
Half of all proceeds from the sale of Solebury Rye will be donated to Solebury Township Historical Society. Funds will be used to build upon its existing educational programming and to enhance its preservation and research resources.
With only 20 cases made this year, the demand is expected to exceed supply.
